Profession Question

Since garrisons made gathering professions obsolete I like many others switched to two crafting professions. I was wondering what you all will be doing with your profs for legion. Should I keep leatherworking + alchemy on my main and do herbalism and skinning with my alt? or just leatherworking + skinning on my main? Will there be any penalty for starting legion with lvl 1 skinning?
