Tacon motor and esc for 2 wd stampede.

I am getting a new motor plus esc and am wondering what higher vs lower kv differences are. I plan to start with a 2s lipo but I want an esc that can properly use a 3s because I plan to upgrade to a 3s at some point.

So I am asking for help in picking a esc, 2s lipo and motor all going in a traxxas stampede 2wd.
