What could I make with leftover octopus?

Grilled up some octopus tonight...what can I possibly use the leftovers for? It's simply seasoned with olive oil, white wine, lemon, salt and pepper.

I don't want it to go to waste but I'm a little nervous about leftover octopus, it doesn't sound very appetizing.

Thanks!

Takoyaki (or a variation - like a patty - since ball shape might be difficult to hold without the right pan. Maybe cupcake pan would work)

Okonomiyaki would also taste good with octopus.

Just wondering if the taste would match... Altho those flavors you cooked the octopus with don't seem too overwhelming

Made Takoyaki two new years ago, and it was fantastic, can't recommend it enough

Ice cream!

Or you could fry it up for some tacos, chop it up fine and make an omelet, etc.

Definitely tacos. No octopus ice cream for me though.

Throw it in some acid and make a coctel or use it for a salad.

That was my first thought, but if its already cooked, would that really help? I suppose it'll still taste fine as a ceviche, but won't actually be cooked by the acid.

Of course. Lots of nooks and crannies to hold onto an acidic sauce, herbs, other crap.

It may also change the texture a bit(the acid) but it's not like you are changing an already cooked protein much.

Definitely, just don't discount vanilla octopus pudding or ice cream!

Octopus Salad

You already cooked it, just make the rest.

I think I will go with this approach, I have everything I need and it seems simple, thanks!

You can grind it up with some pork/beef and make a bolognese. Its a surprisingly good complimentary flavor to the sauce.

Make an octopus salad along the same lines of a squid salad!

I once made a octopus tomato pasta sauce, which was really good. But I had a bunch of octopus for that, so not sure if you could get a good flavor from the leftovers

Rewarm it gently in a bit of oil and eat the same as yesterday. Or, slice VERY thinly and use in a seafood salad. Can be a topping on pizza.
