[Westworld] How do the park operators prevent patrons from stabbing each other?

I get that the guns are fake so the patrons can't get hurt or hurt each other, but the knives seem to be real. Additionally, the guests don't seem to be able to tell who's a guest and who's a host, so what's to stop them from stabbing a guest they assume to be a host?
