Gifting Bitcoin

I want to set 5 BTC aside for each of my two nephews, both under 10 years old. Cryoto creates some interesting opportunities to maintain a degree of control over the funds without setting up a trust or legal entity.

Would love the community's thoughts on creative ways to do this using multisig, smart contracts, etc.
