Long read, comments welcome
Hey guys. I'm 22 and been cooking for 4 years. Finally able to be creative in the kitchen I'm at right now. Things are better than ever but this restaurant has major problems. Mice. Unkempt. Horrible dishwashing. Some bad recipes. Bad food quality during rush. No one cares or asks if guests like the food. Recently, I have been making a great effort to: clean. Clean everything. Modify recipes (Slightly). Get people to label properly and do proper food storage. Rodent prevention. Maintenance. The list goes on. I've really worked my ass off day after day with little notice. One cook, the only other female (I'm a lady, yo) seems to be intimidated by this behavior and has been cornering me, bullying me, and treating me like utter garbage. Also, if I clean things today, and nobody cares to keep it up when I'm not there, I do it all again. and again. We NEED new equipment. New prep tables, a new meat slicer, a new oven with burners. We run out of all plates and all pans constantly. I don't have enough lids for the cambros. The list goes on guys. I'm getting really tired. My KM has been out because his mom passed so everyone has had to pick up slack--and there is nobody to protect me or ward off this other lady cook. I have made lists, better options/ingredients for food. I have written down simple changes like "if we can't get fresh fish, 86 fish, don't serve FROZEN FILLETS". It's the absolute nicest restaurant in the city I live in and everybody who's been hates it. HATES it. Yelp reviews are horrific. Restaurant facebook and website aren't updated. I'm trying to help. Just because I love to cook doesn't mean I love to cook while standing in shit. I'm about to go look for another job at a reputable place. I'm worried if I talk to my GM I'll be undermined for literally any reason. I'm losing reasons to stay. I guess this is me venting. Any thoughts would be nice.
