Classes to take for Senior year high school?!

Hi! So I'm going to be entering senior year later this year. Today we had to chose our schedules for next year and I needed some help deciding what to do.

My situation is a little complicated. I was in a private school freshman year and they had a different requirement system. When I switched in to my current public school, I was already behind on PE. I had to take 2 PE classes that semester just to catch up. For the rest of high school, I've been taking a 0 period so I could catch up on my classes. But here's the thing: I took Chinese 1 10th grade, and I'm taking Chinese 2 right now. UC says the requirement is two years but they recommend three. I absolutely hate my Chinese class. My teacher cannot teach for her life and she's pretty biased. Almost 90% of that class speaks somewhat Chinese at home and that's where the teacher basically starts teaching... I have NO prior knowledge of Chinese and she just piles up tons of homework as if you have no life to do anything. (Literally, not even an AP class and she gives the most work without teaching) I also have to take Ethnic Studies because I didn't do that freshman year, and I have to do Photography because I need one year of an art class. Here's what my schedule looks like next year :

AP Lit Gov / Econ Asian American Studies AP Calc BC Digital Photography Transpersonal Psychology

I am going one above the requirements on everything for the A-G stuff except for a language. I'm also going to do a 0 period, probably Culinary Arts. Do you think that could be a breaking point if I don't do Chinese 3? Because I REALLY don't want to take it and ruin my GPA... I also needs time to focus on creating my apps which is really hard to get when I'm in Chinese. My main goal is to apply to UC's, MIT and Stanford...

Thank you so much!
