Approved Electives for engineering students?

What are some good/easy "approved electives" to take as an engineering student? I can't find a list of said electives so I'm assuming that means you can take any class thats not required for your degree and it will count as an approved elective? Any that are good for specifically Environmental Engineering would be much appreciated.
