What to do with UN-spent coffee

In my family I'm the coffee guy, aeropress, French press bialetti, pour overs. So all my family, friends and co-workers keep on buying me coffee beans and they ALL say your gonna like this I use this and love it. I feel bad saying no thanks and I can't really re-gift without making them all suspicious. So my question what can I do with un used coffee beans I live in a town with a local small scale coffee roaster and I enjoy buying her stuff. When I get gifted beans it's always stuff that tastes super super old( like Starbucks or Timmie's or something from Costco or any generic supermarket brand that I really do not enjoy)
