How do I stop iTunes from moving/renaming/making copies of my music?

Recently I've had to reformat my HD, which forced me to reinstall all my software. With that, I had to download the latest version of iTunes.

When I started importing my music to the library, the software tried to copy all my music to C:\whatever and rename all of my music files the way it sees fit.

As it is, I have a big music folder that is manually organized by artist > [year]album, &c. I'd like to keep it that way and not use this iTunes function at all.

Can I turn that off or is that one of those things where Apple simply hijacks your power to decide and dictates what is best for you?
