Cookbook like Jerusalem but for Japanese

Though I've worked in a number of Japanese kitchens, most of them have been for non Japanese restaurants (go figure) so my knowledge of Japanese cooking is in mostly house meal (oyokodon, unagi-don, tomagoyaki and picked cabbage salad etc).

In a strange way I almost feel like Ottolenghi and tamimi's book is almost Japanese in it's modern, clean and beautiful approach to middle eastern cooking, but I'm looking for that same take on Japanese cooking (lol).

Not specialized sushi, soba, udon but general. A sort of brasserie repertoire but for Japanese food. Particularly at the moment interested in tsukemono.

Even how maangchi's YouTube channel for Korean food. I'd love a source like that (and yes I've consumed all the recipes u/J_Kenji_Lopez-Alt had posted on YouTube and SE).

Most of the books I've seen have seemed very dated like cook books in the 80's and 90's (even Keller's Bouchon seems dated in comparison to Bouchon bakery).

I know that's specific, and Jerusalem was such a revelation that to find something equal to it in the Japanese realm might seem impossible.
