Quick question about the Gluten Free Canadian Bacon sandwich

So we just received a shipment first shipment of the GF sandwiches at my Tarbucks. I know they're supposed to be cooked in the bag they come in, and they get their own tongs and all that, but when you cook them do you keep the bag completely sealed? I'm assuming you do, and I wasn't able anything that says otherwise but I want to make sure

While we're talking about it, WHY for the love of God do they need to get another set of tongs if they're ALREADY IN A BAG?!

I actually just looked this up because it was frustrating me - it's not to keep the tongs gluten free, it's because since the GF sandwich is served in the bag (the bag we touch with our hands, that has been thrown around our freezer, etc etc) the tongs aren't (and don't need to be) food safe. They're just used for the GF sandwich, but the distinction is actually non-food safe/food-safe tongs.

Once I explained this to other partners on warming whom I've caught sanitizing before and not after grabbing the bag, it clicked. I think that needs to be re-communicated.

Yeah, keep the bag sealed. It works out fine. It puffs a little and smells slightly, but the product is fine, I promise.
