Why does chicken and pork have to be thoroughly cooked, but beef doesn't?

Biology

I've watched people eat raw (or very nearly raw) beef before, and no one seems to consider it a health risk. But if you were to do the same with chicken or pork, you'd be called crazy. What's the difference?
