Good places for a bike ride

My wife and I are looking to get a little more active and want to start riding our bikes a bit. Any thoughts on where we can go for some nice quiet bike time that isnt too challenging and is reasonably close to Winnipeg? We aren't inerested in road riding (drivers here are nuts and I'm not looking to get killed). Any thoughts would be appreciated!
