Questions About Heretics of Dune (Spoilers)

I just started the book and am about 4 chapters in.

1. What are chairdogs? The book said "living furniture," so are they literally chairs that are dogs?

2. Why were the Duncan gholas fully grown in God Emperor but the one in Heretics was raised from infancy?
