Looking for a great sit-on-top Kayak for a lot of use. Willing to spend anywhere up to maybe $3k, recommendations please?

I'm really liking the design of the sit-on-top. I've never owned a kayak, and have only been in a cheap sit-in kayak, had a good time. Only real issue was when paddling faster, the kayak felt way more unstable. I assume with buying a better model I wouldn't have this issue?

The sit-on-top models seem perfect for what I want. Easy access out of the boat in case I need it at anytime, kayak fishing seems like it would be great with a sit on top model, and just exploring the outskirts of a lake.

So I'm really looking for a kayak with lots of room for storage (a beer holder would be nice), lightweight, with great stability. I would love one with the ability to sustain some rapids, but I don't know if they make sit-on-top kayaks with that purpose. I plan on using this at least a few times a month so I want to get a nice one. I really don't know how much a kayak that's perfect for me would cost. I could be a little flexible with my spending amount too. Thanks for any recommendations!!
