Question on making hummus powder (just add water)
I have used the prepackaged dry hummus made by Casbah, but it is getting difficult to find locally.
So I googled for this and found a blog post on Merrell's website: http://www.merrell.com/US/en/blog?url=%2F/merrell_us/just-add-water-hummus-recipe/
Ingredients:
1 small dried garlic slice, 1/4 cup dried cooked chickpeas, 2 tsp sesame seeds, lemon zest, salt, pepper
Prep:
In a mini chopper, pulse garlic, chickpeas, sesame seeds, lemon zest, salt, pepper and cumin (if using) until chickpeas are powdery, with as few small chunks as possible. Transfer to a sealable plastic bag, seal and store at room temperature for up to 1 month.
Now for my question.
What exactly is dried cooked chickpeas. Am I taking dried chickpeas, boiling them in water, and then dehydrating them?
Or do I just take a bag of dried chickpeas (uncooked but dehydrated as far as I know), and grind them up.
