Holodecks - food and drink

I've been rewatching Voyager and have noticed that every time the crew are in the holodeck (in both Chez Sandríne and Neelix's Polynesian resort) they seem to both eat and drink the food and beverages.

Why do they do this? I've always assumed the food and drink are just holo-images and wouldn't provide actual sustenance yet they seem to become intoxicated and enjoy the food.

Is it from replicators, do they take provisions in or is there something I'm missing?
