I need some help with my 1800x and MSI Gaming Carbon X370 Mainboard

Issue 1. I cant change the CPU fan curve in the Bios. I can make changes to it. But the Bios says I didnt make any changes when exiting. I remember my Z170A Gaming M7 from MSI showed me the 4 nodes and which temp causes what fan speed %.

Issue 2 and the reason why I noticed Issue 1: My 1800x jumps up and down in Temperature. It Idles at around 38°C and jumps up to 50°C. I also noticed it happens (obviously) when the CPU usage suddenly spikes and jumps back down. I am doing nothing. It just jumps up every 10 seconds and goes back down instantly, but leaving my fans load.

Kinda reminds me on this GTX 1080 bug where the fan also would sound like the ocean with waves coming in. Thats actually exactly how it Sounds like.

Bios was updated by the seller (a big company) and even got a Certificate, so the latest Bios should be installed.
