Smart equipment crafting combos

I'm new to the game and trying to learn as much as possible before release. I've been thinking what kind of builds should I do at release.

I've thought going for quarterstaff with plate and leather gear because that would allow me to only gather ore and leather. Is it important that I would be able to craft all of my own gear? What other optimal builds are out there? Am I completely wrong or should I be thinking something completely different?
