[question] Odd symbols from Append to File

Hello, I originally created this workflow to create PDF files from a picture I take of a business receipt, name the file a certain way, and save it to Dropbox. That's been working fine.

Recently I've tried to add a step where the details of the transaction are appended to a .txt file. But even though it looks fine in Quick Look, the resulting .txt file contains a lot of odd symbols.
