Possible recipe from an old Twin Peaks episode

From the season 2 premiere back in the 90s. I've always wondered if this was a real thing and if so, what it is. Could be Icelandic, based on show context.

The character Jerry Horne, a foodie if ever there was one, is telling his brother about this as small talk in a scene: "I read all about it in this French magazine - they take the entire head, they dip it in this kind of blancmange pudding, roll it in oats, stuff it full of walnuts, hot rocks and a spice bouquet, wrap it in a papilliote, seal the edges with a sugar glaze and bake it under glass."

I just searched a ton of old recipe books looking for something similar to this, because I love a good treasure hunt. There are lots of sheep and pig head recipes but I found none involving oats or walnuts. Some mentioned baking, many involve a spice bouquet, some recommend serving in a blancmange dish, some use a papillote or similar containment vessel, but nothing came remotely close to the dialogue's description! Someone able to search in French or Icelandic could get better results.

I tell you what though, people ate a lot of animal heads back in the day! This modern anthology of old timey fancy recipes for every day of the year, "Menus from History" by Janet Clarkson, was particularly interesting.

The I once read about Svið, sounds familiar with the head, but I wouldn't know if it comes close to what you describe.

Edit: repaired broken link, thanks to pcj.
