World of Warcraft and EVE Veteran, thinking of trying Guild Wars 2?

[Question]

So I've played EVE Online for 5 years now and World of Warcraft for 9. I saw a few posts pop up lately on this sub that talk about how even if you don't have a ton of time to play, you can still enjoy and do a lot in GW2. This appeals to me quite a bit. My only question is deciding on a class to play. My main in WoW was a blood death knight tank, basically a high HP, moderate to low damage dealing self healing type class. Which profession in GW2 is most similar to that? I've thought about Guardian but from what I understand it's more of a support role? I've also looked at Mesmer, because I've heard they can be tanks, but have also heard they have such low dps it takes a long time to level.

I've read the various threads in the wiki, to base some of these first decisions off of, but it's with this that I have some further questions with.

To me complicated professions aren't an issue. If I can learn EVE, I can probably learn a profession here. I guess a counter argument to leveling up a tank with low dps, is that the trade off is say we get a quest to kill 10 wolves or something, playing a tank in WoW allowed me to pull all 10 wolves at once and do a combo of AoE damage and single target DPS to whittle everyone down at once. Thanks for any advice.

Edit:Thanks for all of the replies. I'm going to scale up to 80 like some have suggested and try out Mesmer and Necromancer. Thanks again.
