Looking for a single-player "progression" ish game.

Hey! I am glad I found this sub-reddit as I have been googling to find the types of games I'm looking for for a long time now with no luck.

I don't know the exact genre, but I am looking for single-player games where you progress your character/town/city/whatever as you go. It doesn't have to be action or fighting, it can be all about making a business/running a restaurant to make it the best etc.

Single-player fighting/rpg games where you choose your class and fight stuff to upgrade your skills/talents as well is also something I would put in the same type of "progression" games I am looking for.

If anyone has any suggestions, it would be greatly appreciated, if anyone knows what I should search for to find more of these games it would also be very appreciated!

Thank you in advance.

edit: Forgot to mention my preferred platform of PC. I have an Xbox One as well, but no PS or Nintendo console(s).
