Best survival game?

Any good survival games that don't get boring after a few hours? Not Minecraft, I have put way too many hours in that.

Gathering resources, killing things, leveling up, building a base, just a ton of things to do that aren't boring. I'm tired of survival games where it's like "Okay, you built your base, got enough food to last you forever, and you can fend off monsters easily. Congrats, you beat the game!"

A nice progression would be nice. Start off with nothing, then by the end, you have a ton of stuff.
