Simple/easy recipes

I've been trying to switch to a low carb lifestyle since January now and find myself cheating all the time. It doesn't help that I'm new to cooking as well and am kind of a picky eater. For now, it's been a lot of grilled chicken and turkey burgers (grilled with olive oil and seasonings) and vegetables like broccoli & cauliflower, green beans, veggie tots, salads, etc. I've been getting better at it and seasoning things, but want more variety.

I see a lot of recipes that can be a little intimidating and use a lot of ingredients. So what are your favorite easy recipes that a beginner cook can make?
