Games with tense hunting/tracking for a target ?

Hi everyone, am looking for games with intense hunt/assassination gameplay.

More specifically, anything where

1. You are given one or more target(s) to eliminate

2. You have multiple options to get the job done

3. It involves a fair amount of tracking, searching for the target, preparing your plan, sneaking....

I don't care what we hunt, be it humans, dinos, current day animals, monsters.... so it might include some man hunt around a psycho or walking in a forest to hunt a deer.

Platform is PC, no specific budget, no VR, mods are a great thing too, here's my steam library you can search in so we avoid the "try this" "I have it actually" thing, especially that I feel I've got most of them :)

On other platforms than this but related to this style of games, I have ACIII and Metal Gear Solid V

Thanks for any suggestion :)
