Ice Cream with Sugar Syrup - Help Needed

Hi all - I am trying to find a recipe I used to use to make ice cream that first made a sugar syrup up to something like a hard ball stage and then pour it on to your yolks. I seem to remember that it was a little sweeter than the traditional custard-based ice creams, but that no churning while freezing was required.

My Google skills have failed me, perhaps someone here can help! I am pretty sure that I got the recipe originally from James Martin in one of his earliest books if that helps!
