Beginner Question: Am I getting this right?

So I have read the faq here and some articles but I am confused.

So take for now Tofu as an example but most vegetable shit is similar.

So tofu has as I see it 1,6 net carbs per 100 gramm so I could eat roughly about 1,5 Kilo per day to meet my 25 net-carb goal.

But now the table tells me that same 1,5 Kilo tofu would only have 1300 kcal so way below my normal calorie intake of ca 2300 (1,90m, 100 kg.)

The same is the exact same but even worse for all this green stuff like cale, etc.... Basically all this recommended vegetable stuff on keto-lists just doesnt add up. The amount of carbs in just about anything even the list-toppers is so I can't eat anything without net-carbs hitting limit way before calorie goal.

The only way to make up the difference would be animal products which have often zero carbs only protein and fat. Seriously after breaking my head about this and looking at the nutrients of beef suddenly the whole thing made sense for me.

The more I read, and also look at the motto of the sub like yours it seems like it but I just want to be clear I am getting this right and vegans make it just work by putting in even more effort into this than the omnivores and manage to carve it out somehow. I guess those protein shakes and the like play a big role in this?

I am not even vegetarian (yet), but I try to be conscious about everything and the idea of just eating those amounts of meat every day seems alien to me.

Also as a general beginner question: What is really the difference in outlook between Keto and just running on a calorie deficit in general? After looking at it all seriously for the first time, I feel tempted to say fuck Keto, I will just buy myself some cartons of those Shirataki noodles and running on a serious deficit shouldnt be that hard even for a hedonist like me, and seems way easier than keto. What are the expected different effects between that and Keto? The way I read it you have to run Keto at a deficit also so what is really the difference that Keto effect makes? Is it a kind of inside joke that its so miracolous because many people usually just manage to hit 25 carbs by also just eating 1400 kcals? I also hear you are supposed to be feeling better with this, is just deficiting without Keto the opposite, you want sugar and are grunchy all the time? Any experiences in that regard, is that the point?

Sorry for the slight rant, please answer any tidbit you feel like.
