What were some useful labs you did in Organic Chemistry I?

I will be teaching orgo I labs this upcoming semester and I am planning on replacing one of the labs with something more useful. I'm trying to get some ideas on labs people liked when they went through the class. I was thinking of maybe doing a silica gel chromatography lab because running columns was something I did very frequently working in a synthesis group. What are other people's thoughts?
