Looking for recommendations - a particular style of book

I need some new things to read, and I'm having a hard time pinning down exactly what it is that I'm looking for. I'm not certain there's anything that fits all of the below descriptions, but I was hoping someone could recommend something. Haven't been able to find anything on goodreads.

I like secondary-world fantasy, and I'm interested in reading fantasy that deals with religion, not just the eccentric practices of the followers, but with the deities and their role in the fate of the world/kingdom. I enjoy reading about mortal human characters coming into contact with the creators of their worlds or experiencing things like eternity or the vastness of the universe. For example, I really enjoyed the Mistborn trilogy, the Stormlight Archive, and Warbreaker by Brandon Sanderson. ASOIAF handles it pretty well, but I've read that already. In my mind, other examples would be the Hyperion Cantos by Dan Simmons and the Amber Spyglass by Philip Pullman.

I also enjoy reading stories set in nature or in primitive societies (esp. fictional ones). I'm thinking the Old Man and the Sea, or Call it Courage, or even Moana. I just read Blood Meridian by Cormac McCarthy, which really hit the nail on the head as far as the kind of apocalyptic and primal tone that I'm looking for.

Anyway, I know that's an incredibly vague description, but I'd love to hear any suggestions you have.

Answering questions from the recommendation wiki as recommended by Mr. Modbot:

I am not new to fantasy. I have read most of the books I see recommended on here, but not the Powder Mage!

I value plot, setting, prose, and characterization, but that's about all of 'em

I'm interested in anything, from any time period

I'm looking for more of a serious tone, but for reference, ASOIAF was a bit too cynical for me. I like grand, epic adventures
