Why don't we know with certainty how the Egyptian pyramids were built? Was none of this information passed down from generation to generation?

I have always wondered why we know so little about the great pyramids of Egypt. How was this important piece of history lost? Were the Egyptians wiped out similar to the Maya? Is it possible that we could uncover something written that explains the construction and purpose of the pyramids?
