Want to break out of web dev with another Bachelor's degree, what would you recommend.

I have 8 years in web dev, over 4 different companies. But it's just not the same feel to me as it was before. I want to move up to something more advanced. I want to apply more low level knowledge of how a computer works.

Embedded dev interests me now. But I'm also self-taught I web dev with an unrelated degree. I think it will be a pipe dream to chase embedded dev with only web dev experience. So if I return to college I have an option of several different degrees. I can just go with CS like most people do, or EE, CE or Math. At the top of the list I'd put CS or CE but what would you think would be the most rewarding for my situation?
