How to downgrade to iOS 10 before giving away iPad?

Hi all,

I'm giving my iPad Pro 9.7 to my mum as I upgraded. It's on iOS 11 (latest PB) at the moment.

What's the best way to wipe the iPad and downgrade to the latest version of iOS 10? I suppose this should be easier than a standard downgrade because I'm not interested in saving or restoring any data.

But I do have a few questions:

• Do I need to turn off Find my iPhone on the iPad - if so, at which stage?
• How exactly do I restore to iOS 10 - some sites say to put the device into recovery mode and just click 'restore & update' whilst others say I need to download the actual iOS 10 firmware and select it manually in iTunes?
• Can you think of any data I am forgetting about on my old iPad that I might need? As there's no decent local store on iOS, most of my files are in the cloud, I use Apple Music, and I don't care about the content I have in apps such as Infuse. As far as I can tel, things like photos, notes, etc are all synced via iCloud to my new device.
