If gender is different than sex, why are there trans people insisting they are now transitioned male/female after a certain point?

that point can be the moment one declares themselves trans, 1 week after hrt, or after all the surgeries one aspires to.

if gender is not similar to sex in any way, why are there those that continue to call themselves biologically x/more so x than y after transition?
