I know that a calorie is the energy needed to raise 1 gram of water through 1 degree Celsius, but what is the actual process used to determine what calorie value to put on a nutrition label?
Would the food item be burned like fuel in order to measure the energy released? If so, what kind of device is used, and how are beverages or food items with very high moisture content handled?
