Declaring an additional Minor - Post 9/11

I am going into my third year of electrical engineering. I recently was hired by the University full time as a technician supervisor, yay, but had to cancel all but one day time class. I struggled to find and available evening courses to stay above half time, to keep my freshman year student loans from triggering payment due.

I finally got added to geology. Unfortunately, it doesn't d fit my degree plan. Neither I nor advising noticed until a week into classes.

Can I declare a geology minor just because and keep using my GI benefits this semester? I'm not too worried about longer term, the University employee benefits kick in next year.
