What are your favorite cheeze recipes?

Hey everyone! Long time reddit lurker. Vegan since January. New to the subreddit. Made a cashew mozzarella, recipe courtesy of artisanveganlife. Made a pizza one night and caprese the night after. It is soo good and tangy, definitely hit the savory mark. It was a good intro to the world of vegan cheeses but I want to do something more traditional like a hard cheddar that I can make grilled cheeses with. Can anyone suggest a recipe like this?
