How do I get a backup to revert to AFTER someone goes over restrictions and modifies them?

Long story short, the school (which claims to be using technology), is going to ban YouTube and many other apps that are used for learning just because of one stupid group. I'd like to get a backup to revert to once they start programming my iPad that way. Any ideas? Would iTunes be enough?
