Andouillette Recipe

Hi! I'm making some sausage this weekend. Since I have all the equipment out I figured I'd try something different as well.

I like (beef) tripe and figure an andouillette would be nice to try, but for the life of me I can't find any recipes. Does anyone have one or know of one?

EDIT: To clarify, I am looking for Andouillette not Andouille sausage.
