How do knit blocks differ from woven blocks?

I've tried to find the answer online but I can't! So I put it to you clever folk.

I'm wanting to delve into knit pattern drafting but I don't know how my blocks should differ from the woven ones. I know there doesn't need to be as much (or any?) shaping through darts so how would I go about drafting that? Can it just be a woven block with all the darts closed up?
