Why is the computer so incredibly and unrealistically smart / skilled?

I play on the Nintendo Switch, and I might be a complete noob or just poor at this game in general but I have some mighty complaints when I play vs the computer:

If I strike, they block. If I then proceed to grapple, they stop blocking and attack, frame-perfect.

If I block, they block too, but the frame I stop blocking, they hit me before I can hit them.

It's impossible to grapple the computer, as they just counter it, and they just block regular attacks, and there's no way for them to stop blocking, even as the shield goes red, it just regenerates even though it breaks.

The computer only struggles when I use ranged attacks.

If the computer hits me, I can take a coffee break because they don't let me do anything for literally 10-20 seconds, with amazing combos.

If I use the counter-attack charge-up thing, they hit me frame perfectly as I release, so they counter it (The biggest complaint I have).

Is this normal for fighting games or is it just this version, or is this intended? I feel like I can't even win the daily challenges anymore.

Sorry for the rant, feel free to tell me how to improve or tell me that I suck, but I'm just very frustrated with the game.
