How important is it to keep pickles in the fridge?

All the recipes I see say that pickles need to be refrigerated once you open the jar and they're ready to eat, but my mom has always made all sorts of pickles and kept them on the kitchen counter for months, and they always tasted fine. How safe is it to not refrigerate pickles and fermented vegetables?
