Pull out your fun and shoot while dying?

Am I missing something or is that impossible? It seems like my only options are wait or die.

After watching The Ballad of Buster Scruggs, I keep thinking about how I’d love to be able to shoot some jackass as he comes close to try and melee me to death while I’m knocked down.
