To what extent can I de-spy an Android phone without custom ROM?

If I delete as much Google apps as I can and use almost all apps from Fdroid, what exactly will Google Play Services track? Can they track Fdroid apps usage and contents? Can Google remotely access non-OS files on my phone, like documents and music? Will they track my location without location permissions? Can they listen to my mic undetected?

Honestly, I am scared of using Lineage OS because:

  1. Its developer can drop support for a given device at any time without warning
  2. Employer might require me to use apps like WhatsApp, and I don't feel knowledgeable enough to troubleshoot issues with Yalp or microg
  3. Lineage-supported phones happen to be hard to buy in my country, since most of them are either very old or too expensive

Should I just give up and might as well use Google apps because they track me anyway, and try to make sensitive activity on PC only?
