Finding real life application to IA topic.

So my Bio HL IA topic surrounds the impact of proteins on the coagulation of milk. However, I am not exactly sure which direction to move towards in regards to making that real world connection: cheesemaking, or digestion of milk in humans (presumably for infants). I'm mainly lacking any info on the latter - any information on current issues regarding milk digestion by humans would be appreciated.
