How to navigate picky eating? (Hasn’t eaten a veggie in months kind of picky)

My son used to eat everything on his plate, but as the months went on he began to be selective. No problem, I thought, toddlers are notorious for being a little picky. Hell, I don’t really like vegetables either.

Let’s just say it’s gotten out of hand. It started with completely cutting out veggies. I’m embarrassed to admit it but my son has probably eaten one serving of veggies in the past couple of months. I tried to hide them, force them, it just doesn’t work. Then meat. He will eat steak and ground beef in spaghetti but that’s it. If you give him chicken, he will either totally snub it or eat the breading off of it. Fish is a total no-go. I’ve hidden chicken in a quesadilla a few times but if he notices it’s in there he will pull apart the tortilla and eat around the chicken.

So now he will only eat dairy, fruit, and carbs. I try making pbj’s and even those don’t really get eaten. I try making smoothies and those get snubbed. I don’t make him different meals unless what my husband and I are eating is spicy. So many nights he will eat the carbs off his plate and be done.

How do I navigate this? He’s 2 and I know this is par for the course but wow do I feel like a bad parent for how little nutrition my kid eats.
