advice for brisket on a pellet grill
I have never made a brisket before and need some advice. I will be cooking a 14 lb packer on a pit boss grill.
This is what I know so far:
- trim using Franklin's videos as a guide
- S&P rub, brine at least overnight in the fridge
- 225
- Try not to wrap to get the best bark
My questions are:
- Will I get enough smoke with just pellets?
- Do I need to add water in a pan on the grill?
- How long of a time frame am I looking at? Should I just put it on at midnight the night before to have it ready for a 6pm dinner the next day?
- Can I just wrap in foil after it's cooked for 1 hour?
- Place the brisket fat side down on the grill?
Thanks!
