Basketball noob seeking answers about box and 1

If the box and 1 means its just 1 guy on Steph and the other guys in a zone, why can't Steph just iso Fred van fleet? Sorry if this is a dumb question.

Also why doesn't Steph iso more in general, especially if when he calls for a pick they end up doubling him?
