How to recreate howies dog meat rolls

If someone could figure this out I’d be eternally greatful. I cut howies food rolls for my dog like so https://youtu.be/UPovXRemR10. The thing is, they are like $17 for two pounds and have additives. I’d rather buy like 10lbs of real meat from a butcher and cook them myself. The thing is, as you can see from the video, it has to be that consistency or it’ll crumble. Any suggestions?
